Indian Spiced Cole Slaw
A wonderful side dish for luncheon or dinner, this exotic and delicious cole slaw has a distinctly Indian taste flavored with cumin, cilantro, coriander and mint.
INGREDIENTS
8 cups shredded cabbage
1 cup shredded carrots
½ cup coarsely chopped red onion
1 jalapeno pepper, seeded and finely chopped
2 tablespoon vegetable oil
1 tablespoon black/brown mustard seeds
1 teaspoon cumin seeds
½ cup lemon juice
2 tablespoon balsamic apple cider vinegar
½ teaspoon salt
Pinch of granulated sugar
½ cup fresh cilantro/coriander leaf, chopped
¼ cup fresh mint leaves, chopped
METHOD
For the Slaw:
Shred the cabbage and carrots in food processor or finely slice the cabbage with a mandolin or sharp knife. Pulse the jalapeno pepper and onion in the food processor. Transfer to a large bowl and set aside.
In a small skillet, heat the oil over medium heat. Add the mustard and cumin seeds. Fry until mustard seeds turn grey and pop (about 1 minute). Scrape out and pour over the cabbage mixture.
For the Dressing:
Combine the lemon juice, balsamic vinegar, salt, and sugar in a small bowl. Pour over the slaw. Garnish with fresh cilantro and mint leaves, if desired.
